Apricot Pepper Jelly

I was asked by my customers to create an apricot pepper jelly. They wanted it to be "apricoty" with a good kick to it. I wanted it to be... great: not too sweet, not too vinegary, and also really pretty. So here it is, I think you'll like it a lot!

Enjoy my pepper jelly with meat, shrimp, Asian food. Try it with crackers and cream cheese and (my favorite) with goat cheese. And remember to share with your friends!
